Creamy Chicken Penne with Parmesan and Tomato

Ingredients

2 cups penne pasta
2 tablespoons butter
1 lb chicken breast, cut into strips
4 tomatoes, diced and unseeded
1 medium onion, diced
6 garlic cloves, minced
1 tsp oregano
1 tsp marjoram
1 tsp thyme1 tbs black pepper
1 tsp salt
1 cup of heavy cream or half and half
1/2 cup grated Parmesan cheese

Directions

In a medium saucepan, add butter, garlic and onion, oregano, marjoram, thyme, black pepper and salt. Cook until onions are translucent.

Normally, most normal people (I admitt that I'm not normal) have chicken ready and thawed prior to cooking. This was last minute. My chicken was frozen, so I boiled my chicken, then diced. Next time, I will add the raw chicken in this first step so the chicken can soak up some yummy juices.


Set a pot to boil 4 quarts of water or chicken stock. Add penne, boil until pasta is tender but still somewhat firm. Nobody likes overly mushy pasta. I like to boil in chicken stock because it can give the noodles a little more flavor. In this recipe, I even boiled them with some of my diced tomatoes to soak up some of those juices too!

Anyway, I added my diced chicken at this point. Stir in the heavy cream, Parmesan cheese and as seen in the next picture, I also did the rest of my tomatoes. The mixture can look a little soupy at first but it will thicken up.

If you had to opt for milk and butter to substitute for the heavy cream or half and half, it's okay! Use some corn starch or arrow root powder to thicken it up. If you do end up using a thickener, heat up your milk in the microwave and dissolve the thickener into the milk prior to adding. If you add the thickener without dissolving it first in the hot milk, it will clump... Ew!
Drain the noodles and return to pan. Add the chicken tomato sauce, stir and serve. Sprinkle some Parmesan for some really yummy flavor. If you want a little kick, use crushed red pepper in the beginning of the recipe. Enjoy!

Gemelle with Oil and Garlic

For Christmas, Danny and I recently received "The Silver Palate Cook Book" by Julee Rosso and Sheila Lukins with Michael McLaughlin. Many of these recipes look fantastic! I came across "Spaghetti Aglio Et Olio" or Spaghetti with Oil and Garlic. I figured I would try it but it looked boring. I'm sure the dish is really good but it's just a pound of spaghetti dressed in chicken broth, garlic and parsley. Aside from that, I didn't want a dish that was comprised of just carbs. I added chicken, tomato and some other stuff to spice it up. Maybe I can call this one "Gemelle Aglio Et Olio"? Lol.

Ingredients

12 garlic cloves, peeled
1/4 cup olive oil
4 quarts chicken stock or canned chicken broth
2 chicken breast fillets
18 oz Gemelle pasta
4 red tomatoes, diced
1 tbs parsley
1 tbs oregano
1 tbs basil
1 tbs ground black pepper
2 cups grated Parmesan cheese
1/4 - 1/2 tsp of crushed red pepper flakes (optional)

Directions



Slice 6 cloves of garlic and mince or garlic press the other six. Place the sliced garlic in a small skillet and garnish with black pepper. Keep it at bay for later use. I realized that I didn't use as much olive oil as you can see in this picture and next time I think I will use the 1/4 cup as suggested in the ingredients list.
Bring 4 quarts of chicken stock or canned chicken broth to a boil. Skim off the foam as it boils the chicken. The chicken can be whole or finely diced, whatever your preference is. I prefer whole so my slices are more fine later. Allow the chicken to boil for 15 minutes or until thoroughly cooked.

While chicken is cooking, start on your herbs, cheese and tomatoes. Set aside.

After the chicken is done, finely chop if not done so already.

Do not drain your chicken broth. Instead, add the gemelle and cook until tender but still firm; do not overcook. Drain most of the broth, leaving about 4 cups and returning the pasta to the pot.
 
Add the chicken, tomatoes, minced garlic, herbs and 1/2 cup of Parmesan cheese to your noodle broth mixture.

Add your desired amount of crushed red pepper flakes. Not everyone likes super spicy! I found that a 1/4 tsp - 1/2 tsp gave it a nice kick that wasn't over doing it.

Stir and allow to simmer for 5 minutes.

Meanwhile, heat the oil and sliced garlic you previously made over medium heat. Cook, stirring occasionally, until golden brown. Stir in heated olive oil and sliced garlic and toss thoroughly.

Divide your pasta evenly and serve immediately garnished with freshly ground black pepper and Parmesan cheese. Enjoy!

I kept insisting to Danny that we make a creme sauce to dress the dish but he assured me that it would taste good. In the end, the olive oil and chicken broth coated the noodles perfectly almost like their own sauce. I loved it!

Happy New Year

Happy New Year! We started the blog and then BFFFFFTTT..... life happened. I think my new years resolution is to start updating more. I can't wait to put up pictures of the baby when she comes as well as new recipes or something. She's kicking me at the moment, she must agree!! As I just posted on Facebook, I hope giving birth will be the only pain I get this new year.

We spent the new year at Danny's brother's apartment where we had an amazing view of the Denver area.


They launched fireworks off two of the buildings but I wasn't able to get very good shots (I think this camera is crappy). I referred to a friend who is majoring in photography to try and mess with the settings but it didn't really work out.


Here is Danny being a goof. It was 9:30pm before the New Year lol. Don't know why that matters but I am saying it anyway! We watched Star Wars: Return of the Jedi!!! Woo! Man that movie looks so crappy now and we found a lot of plot devices in it.

Here we are smilin'... at least he is hehe. I decided to finger curl my hair for the event! It looked meh. I need longer hair! Thank God for pregnancy at the plus side of even my hair growing at super speed!

My hubby is so handsome :)

We counted down, made some noise via annoying noise makers, then had a glass of white grape juice in campaign glasses! Plus a kiss from Danny. It was all around a nice night. Happy New Year everyone!

I approve this message

I can't wait until tomorrow. Why? Because tomorrow will be the day that the political attack ads will finally stop. I understand the need for a candidate to get their name out but not every 5 minutes. These drive me crazy and we don't even have a cable subscription. The ads I hear on the radio and what I see on Hulu and YouTube are more than enough. I feel sorry for those of you that watch network TV.

Over the weekend I discovered that YouTube created a PS3 app. I thought, "Great, I can now watch cats doing cute things and guys almost killing themselves from the comfort of my couch." So I fire up the app and I check out the trending videos and I play one. I see the dreaded "Your video will pay in 16s" message pop up and I don't think much of it. I watch a political commercial about a guy from Hungry who had a dream about coming to America, no big deal I watch my video and I'm on to the next. I start the next one and guess who I see? The same guy. I watch a few more and there he is to greet me at every video. I understand that companies like YouTube make money from advertising but come on, diversify your ads a little. I must have seen this ad 10 times in a row.

Anyway, the election is tomorrow and I won't have to look at or hear these ads for another 4 years. Don't forget to vote. Check out justvotecolorado.org for polling information.

What a weekend.

I am sitting here at my desk and I just now realized that is it already Monday. Did I even have a weekend? I guess I did because when I got up this morning I was in a different bedroom and I noticed a freshly painted accent wall and a newly painted bedroom.

This was an extremely busy, but very productive weekend. I seem to go through these phases were I get on a home improvement kick and I try to work on and fix everything that has been driving me crazy around the house. We painted, did some massive fall cleaning, moved bedrooms and did a lot of overall reorganization. We are trying to make some extra room for out little bundle of joy that will be with us before we know it.

For the rest of the day I am going to work on getting the rest of the paint out from under my fingernails and think about what else I need to get done. So for everyone that is wondering where their weekend went don't fret another one will be here before you know it.

November: One of My Favorite Months

It is finally month eleven. The leaves have changed, the air is so crisp, the food is delicious, the colors red/orange/yellow/brown look incredible and the fashion gets really adorable. Don't get me wrong, there are downsides. I tend to get a billion sinus infections at this point. *crosses fingers* Then there is day light savings time. I don't particularly enjoy it but I know the chances of the state changing its policy on that fun note will probably never happen. So the best I can do is accept the DST ugly head and not complain.

In 4 days I will be 24 weeks pregnant and the baby will be THIS BIG!!!! *holds out a ruler* Almost 11 inches! I keep wondering if by week 40, will I really be able to deliver a melon to my husband? Probably. One thing I am thankful for this thanksgiving is a baby in my tummy who gives me the excuse to eat as much mashed potatoes, gravy and stuffing I want! I know I have a baby bump but when November 22nd roles by, I'll have a food bump too.

November is great for the walks with the cool and calm air. Granted I can't really walk too far on the trails or else I'd fall down in a ditch and die somewhere based on my center of gravity changing.

One thing I always have difficulty with is the fashion. As said, it is adorable but who in God's name can afford such beautiful clothes? Unless if you want to get into serious debt, you don't get any of the fancy stuff. I have tried to find ways to save. The $25 brown button down jacket from Walmart or Target do not compare to the $150 soft warm cozy (fantastic fabric may I remind you) jacket from Dillards. I have seen women my age wandering around (Target) in the most adorable clothes. What the heck are you doing in a Target?! Your fancy rich coat and boots are making me jealous, go shop somewhere else! When trying to save, it's just not the same. I can tell a Walmart Uggs rip off from the real thing. Not that if you wear the ones from Walmart that it is a bad thing. For my personal wishes and desires, I just want the real thing. Who says a pregnant lady can't be fashionable? Actually, it is harder than one may think. I'm not going to be pregnant for much longer so I'm not going to go out and by $80 pair of preggo jeans. Walmart doesn't carry it anymore. Target overprices. Savers.... is just a terrible place where people's hopes and dreams go to die.... It certainly isn't a picnic. If it is, picture your picnic swarming with ants... lots... of ants....

Besides my art getting up on here, I would like to put up recipes and how to's. Since it's November, I'm doing a November Recipes Tab or something or other on here.
